After a couple of years teaching cooking and nutrition classes at Challengers Boys and Girls Club in South Los Angeles, we wanted to conduct an intensive food awareness class over at our place. We led a kitchen tour, and then set up stations in our garden parking lot where several of our chefs helped students prepare dishes for a BBQ lunch. Afterwards, we brought out a whole pig to break down as we talked about how it related to different food parts like bacon, ribs, and pork chops. At first the children were horrified, but then they were intrigued. We feel confident that this experience made an imprint on their memory so that they will always understand that an animal is behind eating meat. Photos: Jennifer Emerling
